“Mac and Cheese- Guilt-Free”

Despite what many people think- I’m not a total prude when it comes to eating. Hey- I get cravings too!

Doesn’t matter if your a Kraft, Velveeta or DYI fan- nothing beats a bowl of mac n’ cheese.

BUT…

if you’re trying to lose weight or keep it off- then 780 calories and 141 grams of carbs is a bit much- don’t ya think? (nutritional info per box of Kraft Mac ‘n Cheese)

My recipe has only has 110 calories and can be tweaked till you love it. Here’s what you’ll need:

1 pkg of Tofu Shirataki noodles (in the refrigerator section of the grocery store- often grouped with health food items)

2 light Laughing Cow wedges

a dash of salt and pepper

1.Drain the noodles- then rinse them very well. (They smell a tad funky at first- don’t freak- it goes away when rinsed. )

2.Put them in a tupperware-style bowl and add the two wedges of Laughing Cow.

3.Microwave for 2 mins. Then mix- and nuke for another min.

4.Add salt and pepper to taste, cut up the noodles and enjoy.

Remember- this isn’t the real thing so be open-minded. You can add cut up veggie dogs, veggie bacon, steamed broccoli, other cheeses- the combos are endless. mac-and-cheese
